Alfajores // Shortbread Caramel Sandwiches

One of my favorite desserts has always been the alfajor. These are cookies sandwiches made from two layers of shortbread with delicious Peruvian caramel tucked in between.

Alfajores // Shortbread Caramel Sandwiches

2 cups of flour
1/8 teaspoon of salt
3/4 cup of butter, softened
6 tablespoons of powdered sugar, divided
1/2 teaspoon of vanilla
1 cup of manjar blanco (dulce de leche)

1. On a clean surface, mix the flour, salt and butter together with your hands until the ingredients are well combined. Add 4 tablespoons of powdered sugar and vanilla; kneading together until combined. Cover well and chill for 20 minutes.

2. Roll the dough out to a 3mm thickness. (Cover with wax paper to roll out thin and evenly.) Cut into circles (7.5cm diameter) or other shape. Place carefully on a baking sheet lightly sprinkled with flour. Bake at 350F for 8-12 minutes, removing them from the oven before they brown. Allow them to cool 2-3 minutes on the baking sheet, then transfer to a wire rack to cool completely.

3. Spread dulce de leche on the bottom of one cookie, then cover it with the bottom of another. Sift powdered sugar over the tops of the alfajor sandwiches.

Yield: Makes 12
