Boiled Peruvian Corn

Gretchen Noelle

My love of food was cultivated early on by my family but has come alive while living in Peru. During the 12 years of living in Lima, Peru, I have also enjoyed numerous trips to other areas of the country. Here on Provecho Peru you will find Peruvian recipes in English, American favorites prepared overseas, news about Peruvian Cuisine and interesting tidbits about life in Peru.

Happy Thanksgiving Gretchen!!! I miss so much my Peruvian “choclo”, which is almost impossible to find over here! “Arroz con choclito” is something that goes well with almost every Peruvian dish, or a good Ceviche with your choclo on the cob . . . yummmm . . . want to know a trick I learned from my mom? Put a little bit of anise seeds in the water where you boil your corn . . . and you’ll be rewarded with the most delightful and aromatic choclos!!! 🙂
